Thaumatin is a natural high-intensity sweetener and flavor modifier derived from the fruit of Thaumatococcus daniellii, a tropical plant native to West Africa. It is widely used in food additives, natural sweeteners, and nutritional ingredients due to its extremely high sweetness potency—up to 2,000–3,000 times sweeter than sucrose.
Unlike conventional sweeteners, thaumatin not only provides sweetness but also enhances flavor profiles, masks bitterness, and improves mouthfeel in various formulations. This makes it highly valuable in functional foods, beverages, dietary supplements, and pharmaceutical applications.
